Our story

In 1963, when Michelangelo Marchisio opened 'il fornaio' in the beautiful town of Alassio, he had only one goal in mind: to bring genuine products, made from raw materials of extraordinary quality, to everyone's table.


With the passion that has always distinguished him, Michelangelo has always been committed to researching fine flours and learning new techniques. This constant commitment has enabled today's baker to offer a wide selection of more than 50 types of bread, each with its own unique character.


In addition to delicious traditional breads, you will also find a range of delicious cakes and other tasty treats.

Savoury

Through the continuous search for high quality flours and the application of refined techniques, we are today able to offer over 50 types of bread, from white to cereal, from wholemeal to sesame, from sultana to cocoa, to our typical Taggiasche olive bread to satisfy all palates.


In addition, you will find breadsticks, which are lovingly prepared and rolled out by hand.

Focaccia

The goodness, fragrance and softness of true Ligurian focaccia are unmatched in Italy and the world. The dough, made with high-quality local ingredients, combined with the perfect baking temperature, creates the golden crust and soft centre that make this speciality so unique.


Ligurian focaccia is best enjoyed when still warm from the oven, accompanied by fresh tomatoes or a variety of toppings.

Gluten free

In 2014, we opened a dedicated gluten-free workshop in our bakery. This particular reality is a place where we strive every day to improve and reinvent ourselves in creating products that are always fresh, genuine and naturally gluten-free.


We are also proud to be featured in the Italian Celiac Association's (AIC) Out-of-Home Food Guide, which recognises our attention to the special dietary needs of guests who wish to enjoy a delicious gluten-free dining experience.

Artisanal sweets

Cakes, tarts and sweet breads are just some of the delicious desserts you can find here. You can also request the preparation of gluten- and lactose-free cakes. Our selection includes the famous baci di Alassio, fluffy buns filled with fresh fruit, and creamy cream puffs.
